Here, we take five with the masterminds behind this busy business to find out what goes into creating a mobile five-star kitchen.

Tell us a bit about your business…

Gerard’s Bistro is a favourite restaurant on the Brisbane dining scene. Our vibrant shared cuisine is served in a relaxed setting, and now you can bring this convivial restaurant experience to any location. Led by Ben Williamson, our chefs reimagine the flavours of the Middle East and take your guests on a culinary adventure, while our catering team offers a complete planning service to ensure your wedding flows seamlessly.

What is the main advantage for couples who work with you?

We have a small and passionate team who ensure couples receive a personalised service to plan and execute their perfect day. We are a family business and love the idea that our food can bring people together as two families become one. From every element from food, drinks to styling we take everything into consideration to bring your vision to life.

Can you share some of the things that go on behind the scenes?

No kitchen? No problem? It’s time to get creative and find a way to cook a banquet feast for 100 guests in the middle of the mountains with no running water. It’s not always easy and a lot of problem-solving comes into play when turning a blank canvas into a wedding reception venue. But, add a magnificent marquee, a makeshift kitchen and we are ready to serve a feast fit for a king and queen.

Do you think there are any preconceptions about the wedding industry?

Off premise catering is a good way to lower your wedding budget… When you start shopping for an off premise catering service, understand that you are getting more for your money than simply a good meal. You cannot forget that catering costs cover much more than the meals themselves. There is equipment to consider for cooking, waiters, chefs and maybe even tables, chairs in addition to table settings. Remember that we are here to create a unique experience that is customised to the tastes of you and your guests. We want to work with you to deliver the exceptional culinary experience that your wedding deserves.

What are some of the main questions couples ask you? And what are the answers?

What style of event will best suit our wedding? Canapés, banquet or buffet? This is a personal reflection of you as a couple. We will speak with brides and grooms to find out how they envisage their guests interacting on the day. “We are worried our guests will not speak to one another…” Try a banquet, shared dining is a perfect way to start a conversation across the dinner table. “We don’t want the day to be too formal…” Free seating at dinner or a canapé event with some food stations will get your guests moving. Add some lounges for some relaxed seating, your guests will feel comfortable and settle in for a memorable night!

Can you describe what sets your business apart…

Our food is of course at the heart of our business and we give so much passion and detail in creating every dish. Our food is carefully prepared and presented ensuring that every flavour, every mouthful is designed to take you on a culinary adventure. Our ingredients may be foreign to you, but if you are ready to try something new, you might just be surprised by this vibrant and unique cuisine.

What’s your next predicted wedding trend?

Couples are looking for something unique, and when it comes to venue they start looking for museums, gardens, loft buildings or rooftops to be the ‘it’ wedding venue. Ask us about the Bromley & Co pop up gallery in West End, it’s here for a limited time only!
